Favorite Motif: Steak With Greens

I think one of the best things you can make with steak is to sautee some greens with it. You almost don’t need anything else, just the steak and a huge pile of greens. Arugula works really well, or you can mound some just on top of the hot hot steak so it can wilt a little bit, and break off a few nuggets of parm.reg or even gorgonzola with it.

Putting steak along side or in a salad is also very good! Just be sure to have the right assortment of green flavors that are strong enough to stand up to your grilled steak! I suggest bitter things, radicchio, endive, curly read oak leaf, mesclun or some other kind of really dark blend.

Also, sauteed Kale with bacon, in the winter time, maybe some shallots in there too, makes an absolutely wonderful accompaniment to steak. I suggest you pan-roast it for the lovely reduction you get at the end. Dress up your kale with that!

Here’s a great looking recipe along the same lines: Balsamic Skirt Steak, Fresh Greens, Pea & White Bean Puree from Recipezaar. We really love a mashed white bean side at our house! The thing seems a bit over-complicated, but it is a whole meal, after all.

Finally, no account of green stuff and steak would be complete without mentioning the famous South American green salsa “chimchurri.” So fabulous, especially when you’re growing all the herbs out your back door!

Bovine Myology seems like a very good resource for someone who wants to learn about the various cuts of beef that go into a great steak. There are actually scientists at large Kansas and other Universities in Beef Growing regions of the US that “invent” new cuts which eventually make it into our restaurants and markets. Like the flat-iron. It was invented out of some lesser utilized parts of beef, to be a flavorful, easy to cook steak. Wonderful!

Brahman (cattle)

So, in Costa Rica, the primary (if not only) cattle raised is the Brahman, or crossbreeds of Brahman with European beef cattle. This is probably because:

Brahmans have a greater ability to withstand heat than European cattle. They have more sweat glands, and also an oily skin, thought to help repel pest insects. They are also more resistant to parasites and disease.

I’m trying to find research about the qualities of Brahman beef for steak, etc. because I felt differently about it than I do about the steak we prefer here in the States. It also tended to be prepared differently, especially in the Costa Rican Typical cuisine we had; also, when there were steaks prepared in the USian Steakhouse manner, I felt they did not taste as I expected them to.

Did you know it’s our birthday?? Isn’t that cool?? We’ve been Typing About Steak for a whole year now!!!

Happy birthday to us.

So? What the heck did you get us for our birthday? Uh… Excuse us? You want us to pick it out ourselves, and you’ll pay for it? You’re going to reimburse us for our birthday present? That’s so cheap. We can’t believe it! How could you think that would be a good gift? Do you not know the meaning of the word “gift“?

Here’s an idea, how about, along with remuneration for the gift we select for ourselves, you just go ahead and pay us a decent wage for the time we have to spend choosing and purchasing our OWN DAMN BIRTHDAY PRESENT!!??!?!?

You totally forgot didn’t you? I knew it. I knew you’d never remember our first birthday, don’t even try to cover for your sorry self by trying to make us think you’re generous when you’re really just brandishing cash and making us do all the shopping and thinking. I bet you don’t even have dinner plans for us, do you?
